Nigerian Food Scientist’s Ice Cream Innovation Earns U.S. Recognition

Joy Ikedichi Agbawodike, a Nigerian food scientist and recent graduate of New Mexico State University (NMSU), has gained recognition in the United States for her research on using natural stabilizers in ice cream production.

Traditionally, ice cream manufacturers have used synthetic stabilizers to maintain texture and slow melting. But with the global clean-label market growing rapidly, there is increased demand for natural and transparent ingredients. Agbawodike’s Master’s research provided a systematic method to replace synthetic stabilizers with natural ones, achieving equal or better texture and shelf stability.

She used advanced microscopy and rheology testing to study how natural stabilizers interact at the molecular level during freezing and storage, helping to maintain ice cream quality.

“The clean-label movement represents more than consumer preference, it’s a fundamental shift toward transparency and trust in food manufacturing,” Agbawodike said. “My research demonstrates that when you understand ingredient interactions, natural alternatives can perform as well as synthetics.”

Her work earned her finalist status in the American Dairy Science Association’s (ADSA) Dairy Foods Oral Competition, and second place in the ADSA’s 3-Minute Thesis competition. At NMSU, she also won several first-place awards in research competitions across various scientific disciplines.

Agbawodike attributed her success to her academic foundation in Nigeria, where she graduated top of her class in Food Technology at Moshood Abiola Polytechnic. “My Nigerian academic roots taught me to focus on fundamental principles,” she said.

This fall, she will begin her PhD in Food Science and Nutrition at the University of Minnesota, Twin Cities where she plans to develop low-carbohydrate dairy products for people managing diabetes. Her research will explore lactose conversion and ultrafiltration techniques to create sugar-reduced foods without compromising taste or texture.

“It’s a privilege to represent Nigeria on this stage,” she said. “My work bridges consumer health needs in America with the academic excellence nurtured in Nigeria.”
